2008 Suisun Valley Sauvignon Blanc
The Vineyard: The Peabody Vineyard owned by Ledgewood Creek Winery is located in the Southern portion of Suisun Valley. The vines are about 15 years old and are composed of two different clones of Sauvignon Blanc.

Winemaking: We press the fruit de-stemmed and whole berry to ensure the highest quality juice. The Sauvignon Blanc is chilled at 45 degrees for two days and then racked off of the gross lees into another stainless steel tank. We inoculate with yeasts isolated from the Loire Valley before chilling the juice back down to 55 degrees. The wine is slow fermented over a five week period.

The Wine: The 2008 Winterhawk Winery Sauvignon Blanc boasts superb aromatics and flavors, indicative of cool climate Suisun Valley fruit. This classic Sauvignon Blanc was fermented in stainless steel to preserve bright fruitiness. The result is a dry, varietally correct wine with characteristics of grapefruit, Meyer lemon, honey dew, grass and green herb all framed by lively, food friendly acidity.
Serve With: This Sauvignon Blanc is a fresh alternative to Chardonnay on the summer table when chilled well and paired with goat cheese, roasted red bell peppers, and grilled prawns.
