2007 Suisun Valley Pinot Noir
The Vineyard: The Winterhawk Pinot Noir is grown in Northern California’s Suisun Valley. Located just 12 miles East of the city of Napa, Suisun Valley has been quietly producing world class wines for over 25 years. The fruit comes from Mike German’s spectacular vineyard on the Western slopes of the valley. Winterhawk has first choice when harvesting from this vineyard and our portion is hand selected from the best block on the site. Thin rocky soils and cool winds from San Pablo Bay make this an ideal spot for growing quality Pinot.

Winemaking: The 2007 Suisun Valley Pinot Noir from Winterhawk Winery exhibits a medium deep ruby color along with a seductive nose of sandelwood and choke cherries. Delicate layers of spice, plum and cherries on the palate blend seamlessly with a silky texture and a subtle finish.

The Wine: The Pinot Noir must is cold soaked before fermentation for five to six days to extract color and flavor without any harsh or dry tannins. We chose to use one year old barrels for this wine to limit the oak character allowing the subtlety and complexity of the fruit to dominate.
Serve With: Pair with Poached Salmon or Roasted Game Hen.
