2006Orange Muscat

Winemaking: The Winterhawk Orange Muscat is produced by crushing and de-stemming the fruit directly into the press. The Muscat juice was fermented cold at 57 degrees in stainless steel to preserve the fresh fruity character of the wine. The wine was fermented with the Epernay yeast which helped to highlight the floral notes in the Muscat and the fermentation was stopped leaving a residual sugar of about 4 Brix. Sulfur was added during the fermentation to stress the yeast and increase glycerol production for a richer mouth-feel. The wine was aged for six months at low temperatures to stabilize and was bottled with no malo-lactic to promote a higher acid mouth feel.

These characteristics harmoniously meld into an opulently rich texture on the mid-palate which transitions seamlessly into a lingering perfume filled finish. Lively acidity and a hint of residual sugar combine to create a delicious fruitiness that will pair perfectly with a variety of cheeses and Asian cuisine. this wine offer terrific depth and concentrated freshness on the pallet.
