2006Chardonnay

Winemaking: The Winterhawk Chardonnay is produced by crushing and de-stemming the fruit directly into the press. The Chardonnay juice was fermented cold at 57 degrees in stainless steel to preserve the fresh fruity character of the wine. The wine was fermented in two batches, one using an Australian yeast that promoted a rich mouth-feel and the other a South African yeast that promoted aromatics. A portion of the wine was put through a malo-lactic fermentation to soften the texture of the wine. Respecting the founders wish to express the “flavor” of the vineyard, the wine was aged in neutral oak barrels allowing the different pieces to integrate while maintaining the character of the original fruit.

The Wine: The Winterhawk Chardonnay exhibits lush flavors of pear and apple intermixed with vanilla and butterscotch. Half of this wine was aged in fine oak barrels and half in stainless steel creating a complex medium bodied pallet with delicious fruitiness and lively acidity.
